When the team at Prahran Market send you a mystery box of seasonal goodies to play with, including angelica plums, Pepe Saya cultured butter and decadent 60% dark chocolate from Cioccolato Lombardo ...what do you make? Well, dessert of course. Naturally.     Plums are at their absolute peak at the moment. Admittedly, they're not my favourite fruit and I've rarely baked with them (I know!), but boy oh boy do they work well in cakes AND with chocolate. Everyone needs at least one go-to chocolate cake in their repertoire, and this one fits the bill for more of an ‘everyday’ sort of choccy cake, in my books. Not too sickly sweet and dense (like mudcake!), but still rich, chocolate-y and comforting all the same.     The recipe is based on a Donna Hay cake but we’ve ditched the butter, switched the flour and lowered the sugar to suit the ingredients we had in the pantry, which most definitely means I’ll be eating it for breakfast – it’s practically health food now, with all those important polyphenols from... Now, you all know I love a good sweet loaf (don’t get me started on banana bread!), but I’m also quite partial to a lovely light and moist piece of teacake with a cuppa when a friend pops around. So how about we combine the two?   This Raspberry and Coconut Loaf provides the best of both worlds, still a loaf (tick!), but also surprisingly light and summery thanks to the coconut, raspberries and lemon (tick! tick!). In fact, I’m pretty sure you could substitute the berries for any delicious summer stone fruit you have on hand…arghhh juicy peaches anyone?... [ READ MORE ]
